Aroma Profile: Fruity – Stone Fruit, belonging to the same family as peaches, plums, and apricots; sweet with a slight acidity, possessing the characteristics of “ripe apricot – candied fruit.”
Main Flavoring Components:

Trans-2-hexenal, Ethyl octanoate (green-fruity top notes)
Form: Available in two forms: liquid (dissolved in alcohol/propylene glycol) and powder (maltodextrin encapsulated), colorless to pale yellow in appearance.

γ-Nonanolactone (coconut-almond undertones, threshold ≈ 0.02 mg/kg)

Ice cream, popsicles: Liquid flavorings: 0.03–0.08 g/kg, Powder/microencapsulated flavorings: 0.08–0.15 g/kg, γ-lactone is easily volatile when heated, add at the end of the process;

Biscuits, cakes: Powder/microencapsulated flavorings: 0.10–0.30 g/kg, microencapsulated type is recommended for baking above 180 °C;
