Appearance: Pale yellow to yellow liquid; or white to pale yellow powder (spray-dried type);

Aroma: Rich and long-lasting aroma of fried egg, steamed egg, or egg and milk;

Solubility: Available in four types: water-soluble, oil-soluble, water-oil dual-soluble, and powder; oil-soluble/water-oil dual-soluble type is heat-resistant and suitable for baking;

Stability: ≥85% retention rate at instantaneous 180℃ and baking 450℃;

Vanillin: CAS: 121-33-5, sweet and harmonious aroma

Egg Flavor Food Applications and Recommended Dosage:

Baking (cakes, bread, biscuits): Recommended addition: 0.1–0.3%, premixed with oils, ≥85% retention rate at 180℃ baking.

Beverages (egg and milk, milk tea): Recommended addition: 0.05–0.1%, mixed with milk base and syrup, added later;

Candy (soft candy, hard candy): Recommended addition: 0.1–0.4%, dissolved in syrup or fat phase and added;

Roasted nuts/puffed snacks: Recommended addition: 0.2–0.5%, powdered type, applied after spraying, microencapsulated to prevent oxidation;

Hookah/e-cigarette liquid: Recommended addition: 0.5–2%, combined with PG/VG and cooling agents, for an egg and milk ice flavor;
