Cheese Oil Flavoring (also known as oil-soluble cheese flavor) is a liquid food additive that uses oil as a carrier to simulate the flavor of natural cheese. It is designed to provide a rich, mellow cheese flavor, and is particularly suitable for food systems with high fat content or processing methods such as frying and baking that require oil-soluble flavors.
Flavor Characteristics: Cheese oil flavoring has a rich milky and fatty aroma with appropriate saltiness. The flavor is usually more concentrated and has excellent diffusion properties. Because it is oil-soluble, it blends well with fats in food, providing a smooth and full-bodied taste. The flavor profile covers a range of cheese characteristics, from mild to intense.
Aroma Characteristics: Rich and mellow fermented milk and cream fat aroma, with a slight nutty-meaty undertone, long-lasting aroma, can mask beany off-flavors and impart a “real cheese” feel.
Properties: Oil-soluble liquid (colorless to light yellow), also available in water-oil dual-use type; high temperature resistant up to 180℃, easily mixed with oils and emulsified systems, and can be added directly in cold processing.
Main Ingredients: Butanedione, 3-methylbutanal, short-chain fatty acids, natural enzyme-modified cheese concentrate (EMC), milk fat, etc.; some models may be labeled “natural flavor”.

Uses:
Cheese oil flavoring has a wide range of applications, mainly in the field of snack foods and condiments that require oil-soluble flavors:
Snack Foods: Widely used in potato chips, popcorn (especially movie theater popcorn), puffed snacks, nuts, and other fried foods for oil spraying and seasoning, or as a base for flavored oils.
Condiments: Used in the production of various high-oil content salad dressings, mayonnaise, pasta sauces, marinades, and flavored edible oils.
Baked Goods: Can be used in the dough of savory biscuits, bread, pizza, etc., or as a brushing oil to provide a uniform cheese flavor.
Margarine and Shortening: Used to enhance the flavor of margarine and shortening products.

Dosage:
Baking (bread, cakes, cookies): Recommended form: oil-soluble, recommended dosage range: 0.05-0.2%, pre-mix with butter or oil, approximately 8% loss at 180℃;
Puffed food (potato chips, popcorn) flavoring oil: Recommended form: oil-soluble, recommended dosage range: 0.03-0.15%, evenly sprayed during the oil spraying stage, oil absorption rate 8-10%;
Confectionery (fillings, chocolate): Recommended form: oil-soluble/water-oil soluble, recommended dosage range: 0.5-1.5‰, added at 30-32℃ to reduce volatilization;
Dairy products (yogurt, ice cream, cheese topping): Recommended form: emulsified/oil-soluble, recommended dosage range: 0.04-0.18%, added at the end of the aging process, avoid prolonged sterilization at 85℃;
Frozen/prepared foods (pizza, baked rice): Recommended form: oil-soluble, recommended dosage range: 0.06-0.24%, added during the flavoring stage before shaping, stable aroma at -18℃ freezing;
Seasoning sauces (salad dressing, cheese sauce): Recommended form: oil-soluble, recommended dosage range: 0.05-0.3%, homogenized after mixing with oil to reduce the impact of salt on flavor;
