Caramel flavor is a food additive that mimics the unique aroma and flavor produced by the caramelization reaction of sugars at high temperatures. It aims to provide a stable and consistent sweet, caramelized, and baked flavor, and is one of the most widely used flavors in the food industry.
Flavor Characteristics: Caramel flavor extract has a rich sweetness, warm baked aroma, creamy notes, and a slight bitter-sweet balance (similar to toffee, butterscotch, or brown sugar). Its flavor is rich and long-lasting, giving food a rich texture and depth.
Aroma Profile: A typical “sweet-caramel-baked-creamy” triple structure, centered around maltol, ethyl maltol, furanone, and methylcyclopentenolone (cyclopentenone), supplemented with vanillin, benzaldehyde, furfural, etc., providing caramel, toffee, and maple syrup aromas, with extremely low thresholds (furanone ≈ 10 ppb).
Properties: Commercially available forms are mostly water-soluble powders or liquids, resistant to high temperatures up to 180°C, acid and alkali resistant, and easily synergizes with sugar, dairy products, and cocoa to enhance flavor.
Food Additive Caramel Flavour is used in Coffee, milk tea, carbonated drinks, flavored milk, yogurt, juice, beer, cake, cookies, bread, fillings, syrup, ice cream, ice lollies, pudding, mousse, jelly, caramel sauce and candies, milkshake, chocolate, popcorn, banners, etc

Dosage:
Beverages (coffee, milk tea, soda): Recommended form: aqueous solution/powder, recommended dosage range: 0.05-0.2%, added after sterilization to reduce volatilization;
Baked goods (bread, cakes, cookies): Recommended form: powder/oil-soluble, recommended dosage range: 0.1-0.3% (based on flour), pre-mixed with butter or sugar, approximately 8% loss at 180°C;
Candy, chocolate, caramel sauce: Recommended form: water and oil soluble, recommended dosage range: 1-2‰, added during sugar boiling at 105-110°C for minimal loss;
Ice cream, yogurt, milkshakes: Recommended form: emulsified/powder, recommended dosage range: 0.08-0.15%, added at the end of the aging process, avoiding prolonged sterilization at 85°C;
Extruded snacks (external coating): Recommended form: powder, recommended dosage range: 0.8-1.2%, coated while hot after oil spraying, with an adhesion rate of 8-10%;
Sauces, dressings: Recommended form: water-soluble/emulsified, recommended dosage range: 0.05-0.3%, dissolved with oil to reduce the impact of salt on flavor;
